Eggplant Wedges

Ingredients 

Eggplants

250gm Flour 

375 Breadcrumbs

100 gm Parmesan Cheese 

Eggwash

3 x egg

Salt and Pepper

Tsp Chilli powder

Garlic & Herb spice

Method

* Franks Chefs tip ....Cling wrap your worktop!

Cut and salt the eggplant and leave until water is drawn out (turns slightly brown)

Prepare the egg wash

Flour the wedges before submerging in the egg wash then roll the wedge in the breadcrumb mix

After completing all of the wedges place in air fryer for 12 mins or light oil pan fry for 3 minutes a side.

*Serve with a spicy jalapeno mayo
